Smell: A refined yet powerful Syrah with layered aromas of mulberries, black cherry, and plum, complemented by cardamom, allspice, and delicate floral notes of lavender.

Description: Made from 100% Shiraz (Syrah) grapes, hand-harvested at optimal ripeness. The grapes were cooled overnight prior to fermentation, and 30% were fermented as whole bunches. Fermentation took place using a combination of open-top concrete fermenters and submerged-cap fermenters, allowing for gentle yet structured extraction. The wine underwent spontaneous fermentation, followed by 16 months of maturation in a mix of seasoned oak barrels, a 2500L foudré, and second-fill 400L barrels, contributing balance, texture, and layered spicy complexity.
